Series of Seminars: “Science and Technology for the food industry”

An open invitation to the entrepreneurial, scientific, academic and student community interested in the food area was made by the Center for Agro-acuicola Nutritional Genomics -CGNA- to find out what is being done in the Region in the field of “Science and Technology for food industry”.

Miryam Ríos Gajardo, Journalist.- This is the name of the cycle of seminars whose objective is to show different lines of research developed by the CGNA.

In this context, the first seminar begins this June 1 and aims to show the “Challenges and opportunities of the plant-based industry” and will be presented by the CGNA researcher, Dr. Mauricio Opazo.

The second talk entitled “Microencapsulation: A technology that enhances the quality and innovation of food” will be given by the researcher Dr. César Burgos and will take place on June 8

Finally, Dr. Karla Garrido will close with the seminar entitled “The role of packaging in food science” on June 15

This series of seminars is aimed at entrepreneurs, scientists, academics and students interested in the area of ​​food science, who will be able to learn about the new trends in plant-based food and the potential applications of technologies such as microencapsulation and packaging in the food industry.

It should be noted that this activity is organized within the framework of the “Technology transfer for the regional agri-food sector” program (BIP Code 40037689-0), financed by the Regional Government of La Araucanía. The main objective is to disseminate the topics that the CGNA researchers work on, in addition to allowing the participants to interact with the researchers, solving their doubts and queries with the topics to be discussed.

“It is these instances that make it possible to democratize science and make it accessible to the public, said the CGNA researcher, Dr. Karla Garrido.

“Challenges and opportunities of the plant-based industry”: This presentation seeks to show what are the main challenges facing the plant-based food substitute industry, pointing to factors such as cost, taste, availability and processing. In turn, it seeks to show that despite the challenges it presents, there are opportunities given current food trends. “

“In this way, this invitation is extended to the general public and mainly to those who want to undertake the development of plant-based foods to participate in this talk,” said Dr. Mauricio Opazo, CGNA researcher.

“Microencapsulation: A technology that enhances the quality and innovation of food”. “This presentation aims to show the importance of microencapsulation technology in different industrial fields. In addition, concrete examples of how this valuable technology has allowed us to protect bioactive compounds, such as aromas and antioxidants, for the food industry will be shown”, added the CGNA researcher, Dr. César Burgos.
