Genetically modified purple tomatoes

These purple tomatoes, pictured alongside conventional red tomatoes, have been genetically modified to contain high levels of antioxidants and anthocyanins. Both classes of substances provide numerous health benefits, including an anti-inflammatory effect. Although tomatoes with purple skin exist naturally, their levels of antioxidants and anthocyanins are much lower than those of these genetically modified tomatoes. These substances can also be taken as supplements, but the results of some studies indicate that they do their job much better when taken as part of the food itself. These genetically modified purple tomatoes are the work of Norfolk Plant Sciences (NPS), a company powered by the John Innes Center and the Sainsbury Laboratory, two leading British scientific research institutions.
